Summer Dinner Treat
‘This one can be cooked on the BBQ!
Preparation Time: 20 minutes plus marinating

Serves 4
Ingredients
- 4 single breast fillets, skinned (125 g each)
- 8 large spring onions
- 16 small ‘cherry’ tomatoes
For The Marinade
- Juice of one lemon
- 1 Tablespoon olive oil
- 1 small onion finely chopped
- 2 x cloves garlic, crushed
- 1 Tablespoon chopped ginger
- 2 Tablespoons tomato sauce
- 2 Tablespoons chopped parsley or oregano
Method
- Trim chicken and cut into 2.5 cm cubes. Place in a bowl.
- To prepare marinade, pour lemon juice over chicken first.
- Heat olive oil in a small frying pan and fry onion, garlic, ginger on a medium heat, until onion is softened. Remove from heat and stir in tomato sauce and herb. Add to chicken and stir.
- Cover chicken and marinate in refrigerator for 1 hour.
- Peel spring onions and cut into 2 cm lengths. Wash tomatoes in cold water and dry well.
- Thread chicken cubes, spring onion and tomatoes, alternatively onto 8 pre-soaked bamboo skewers.
- Cook under a hot grill or medium-hot barbeque, brushing with marinade and turning frequently, until evenly cooked, about 10 minutes.
