Summer Dinner Treat

‘This one can be cooked on the BBQ!

Preparation Time: 20 minutes plus marinating

Cooking Time: 10 mins

Serves 4

Ingredients

  • 4 single breast fillets, skinned (125 g each)
  • 8 large spring onions
  • 16 small ‘cherry’ tomatoes

For The Marinade

  • Juice of one lemon
  • 1 Tablespoon olive oil
  • 1 small onion finely chopped
  • 2 x cloves garlic, crushed
  • 1 Tablespoon chopped ginger
  • 2 Tablespoons tomato sauce
  • 2 Tablespoons chopped parsley or oregano

Method

  1. Trim chicken and cut into 2.5 cm cubes. Place in a bowl.
  2. To prepare marinade, pour lemon juice over chicken first.
  3. Heat olive oil in a small frying pan and fry onion, garlic, ginger on a medium heat, until onion is softened.  Remove from heat and stir in tomato sauce and herb.  Add to chicken and stir.
  4. Cover chicken and marinate in refrigerator for 1 hour.
  5. Peel  spring onions and cut into 2 cm lengths.  Wash tomatoes in cold water and dry well.
  6. Thread chicken cubes, spring onion and tomatoes, alternatively onto 8 pre-soaked bamboo skewers.
  7. Cook under a hot grill or medium-hot barbeque, brushing with marinade and turning frequently, until evenly cooked, about 10 minutes.

Nutrition Tip

  • Chicken is a good source of protein and B vitmins, for energy.
  • Four ‘cherry’ tomatoes contribute half the daily recommended intake of Vitamin C, for healthy gums.
