This is a tasty, quick dessert that your kids will love to put together, using the season’s summer berry fruits.

Serves 4
- 3 teaspoons cornflour
- 2 cans (440 g) crushed pineapple in natural juice, drained, ¾ x cup juice reserved
- 1 teaspoon vanilla flavouring essence
- 750ml of low fat vanilla ice-cream
- 4 medium-ripe bananas
- ½ x cup of whipped, reduced fat cream, chilled
- 1 x punnet of summer berries of choice (i.e. Blueberries, raspberries, strawberries)
Method
- In a saucepan, using a wooden spoon, blend cornflour and reserved pineapple juice until smooth. Place over a medium heat and bring to the boil, stirring continuously. Stir in pineapple and vanilla. Remove from heat.
- Transfer mixture to a bowl; cover and chill for 30 minutes.
- Spoon 3 small scoops of ice cream, in a row, into each of 4 oval dessert dishes. Spoon pineapple mixture on top. Peel and slice each banana in half lengthwise. Press 2 banana halves into sides of ice cream scoops in each dish.
- Spoon whipped cream evenly over pineapple. Decorate with the summer berries of choice.
