This recipe makes use of Summer berries. You could also use blueberries or raspberries!
Preparation Time: 10 minutes plus standing
Serves 4
- 2 punnets fresh strawberries, quartered
- 2 Tablespoons firmly packed brown sugar
- 1 cup reduced fat yogurt
- ¼ cup reduced fat sour cream
- 1 teaspoon grated orange rind
- Whole strawberries and fresh mint sprigs for garnish
Method
- Combine the strawberries and brown sugar in a medium bowl and mix well. Stand mixture until the sugar dissolves and strawberries release their juices, stirring occasionally, about 20 minutes.
- In a small bowl, combine yogurt, sour cream and orange rind.
- Spoon one-third of berry mixture into 4 parfait glasses, dividing evenly. Top each with 2 Tablespoons of yogurt mixture. Repeat with another layer of berry mixture and yogurt mixture.
- Spoon remaining berry mixture over yogurt, dividing it evenly. Top each with 1 Tablespoon of yogurt mixture. Decorate with whole berries and mint sprigs. Serve immediately.
Nutrition Tip
- Strawberries are high in Vitamin C. They should be rinsed just before use and then hulled. Pat dry with paper towel.
- Yogurt is a good source of calcium for strong bones.
- Each serving has only 3g of fat, keeping the calories lower.
